Ive been like this for like nearly a month now, i used to get really bloated after i ate meat so i gave it up and ive never felt better than i do now!I wouldnt suggest like a diet, just keep a balance of Veges and fresh fruit. Yoghurt helps with digestion and also i only eat bread once a week since there are LOTS of carbs in them. (cause bloating for me)
I cut out yeast made things too like vegemite, marmite, bread, etc.Drink PLENTY of water because that will help with hunger pangs coz your body is not always hungry!
Be creative with like seafood salads! Fruit salads (fruit mixed with lettuce - very delicious!)
I still eat fish and chicken actually so im happy with just that:)
I think salads are very filling personally, crackers are good too!
Mixed nuts and dried fruit are a nice snack too!

Even type 2s on insulin have a very hard time keeping unwanted pounds off. I was the original skinny minny when the doctor decided I needed to take insulin injections along with my oral meds.I follow the South Beach phase 2 food plan. I follow it pretty religiously too. and have for the best part of 10 years because it is very low carb and you can tailor it to fit your needs.
Contrary to popular opinion, it and Atkins are NOT high fat or high protein food plans!!! They have sensible serving sizes and the choice of foods is great. You do not HAVE to buy specialty foods on either one.
If you eat sufficient saturated fats and sufficient protein, you will be fuller faster so more sated and not want or need as much of the carb stuff.
This study was with type 2 people, but same works for type 1.

First let me cover what you posted about your excercises. Im glad you run im glad your getting into kickboxing. I run as well but what you should know about running is that its much harder on your joints than simply walking. Walking is an incredible excercise because it doesnt stress your body to the max.

I would reccomend in the morning a green smoothie or somehting of the sorts. Get some frozen berries. strawberries blackberries, blueberries store them in the freezer. Stock up on bananas, and find yourself a plant based protein powder. Vega is the best but probabbly quite pricy for someone your age unless you have someone supporting you well financialy. Its about 50 bucks for a months supply so it may be a little much.
You can find a raw source of brown rice protein just search sunwarrior on google. they make a good protein additive, your local helath food store should have 1 of 3 things Hemp protein, (no it wont get you high and yes people have been eating it for thousands of years) brown rice protein, and pea protein. Mostly it wont deteriorate the taste of your morning smoothies. and throw in about a tablespoon of raw coconut oil.
This will solve the dillemma of breakfast and it can be done in about a third of the time. youll be up and out the door faster than ever. The nutrition will keep you full well into lunch time.

low carb diets are best. the key is to watch how foods affect your blood sugar, namely insulin. if you eat foods such as rice, bread, potatoes etc, they are broken down into simple sugars (glucose) and flow into your bloodstream. when your blood sugar rises above normal levels insulin is released to lower the amount in the blood. the only way to do this is to store the sugar in muscles or the liver. when these stores are full, it gets stored as fat. (this means jacket potatoes, rice and especially fruit, can increase body fat!)the trick is to eat slow burning high fibre carbs such as oatmeal, wheatabix etc as this doesnt have as much of an effect on insulin.
high protein meals keep insulin low and arent converted to fat as easily but still keep you full so eat as much chicken, fish, steak and eggs as you want.
if you must eat pasta or potatoes etc, a good tip is to eat fibrous vegetables with it such as brocolli or green beans as the high fibre content slows down then digestion of the carbohydrates and helps them enter the blood stream more slowly which means the insulin release is much lower helping to prevent fat storage.
on the flip side, if blood sugar is below normal, glucagon is released (the oposite to insulin) and this breaks down fat for the body to use as energy, this is what you want.
bottom line, low carb diets are best, easier to follow long term as crash diets never work. keep meals high protein, lots of veg, go easy on fruit and drink lots of water.
also make sure you exercise on a daily basis, even if its just a long brisk walk. the best time is first thing in the morning before eating as you havent eaten while your asleep so your blood sugar is already low and your body will burn fat for energy.
one last thing to answer your question, its important to look at the fat content of the foods you eat obviously BUT the important thing to look at is the simple carbohydrate content. as i was saying earlier, its the effect on insulin that matters rather than calories.
for example, a bottle of lucozade has zero fat but is simple sugars. if you drank this regularly, you'd put alot of weight on as it goes straight to the blood.

Conversley if you eat healthy and in a caloric deficit, but don't work out you can still lose weight.

- Edamame (10 for 1 cup shelled)Any hard cheese is fine; just have one thumb sized stick of it max per day. Also, whole eggs are less than 1 carb per egg. Meat analogues tend to be good choices, too, just read the labels carefully.
Fat - the fat satisfies your hunger and keeps up your calories - you're not trying for starvation. Also, you're trying to convert from carbs as your energy source to fat burning.

My sister is your age and weighs a little more then you. So this is what she says she does. She eats a piece of wheat toast with light jam with a fruit for breakfast. Then some pretzels or crackers, or fruit as a snack if she gets hungry before lunch. For lunch she normally gets the healthiest thing the school has that day, and again a snack if she gets hungry. When she gets home from school she runs 2 miles, then does some sit ups and push ups. For dinner she mostly eats chicken or tuna meals, with sides, like broccoli with cheese, or any vegetables or salad. She does all this because she is on the track team and the Volleyball team, so she stays very fit. The main thing you need to know is, don't EVER starve yourself, you don't ever want to feel that hunger pain. You need to eat every 4 hours with a light snack in between, and if you run and exercise, you can pretty much eat what you want.

My original answer was absurdly long - actually, it' still pretty long - so I'll point you in the right direction and give you some links.1.) I'm a first generation Indian, so I know what it's like to grow up with an Indian family; generally speaking, they don't help much with weight loss. Change your diet, wean yourself off of their habits, or you won't lose anything but time. Trust me on this one; it took me three years to get myself off of my family's cooking, but five months later, I'm down 34 pounds and am now at 13% body fat. (Woot!)
2.) Research stuff. My links will help with that, but you need to know what you're doing so you don't waste time like I did, or screw up your health like my sister did.
3.) Don't listen to bull. Mainly, ignore people who preach spot-reduction, the myth that you can (for example) burn belly fat by doing crunches, or lose fat on your thighs by doing squats. Weight lifting is a must, but that's not why.
4.) Stick to a low-fat diet. High-fat diets have worked for some, but as a fellow Indian who grew up on ridiculous amounts of carbs, it probably won't work for you.
Oh, and eat brown rice instead of white. It'll make a huge difference.
5.) You'll understand this better once you read up, so don't worry about being confused, but I'll post this now because it's important and you might not find it for a while yourself.
If you burn 500 calories a day, you will lose one pound a week. The way I burned two pounds a week was by eating 500 calories less than my regular daily requirement, then burning the other five hundred off through some sort of physical activity. You should, under no circumstances, try to restrict your diet by 1000 calories and exclude exercise.
And jumping rope is amazing. Do it.
